RCBGC (Raspberry Chipotle Bacon Grilled Cheese)
Ingredients
- 4 slices WI River Meats Raspberry Chipotle Bacon
- 2 tablespoons raspberry jam or strawberry jam
- 2 tablespoons unsalted butter softened
- 4 slices hearty bread thickly cut (I used a multigrain sourdough)
- 6 ounces white cheddar cheese sliced
Instructions
- Cook your bacon. We prefer to fry it up in a cast iron or in the oven (400 for 10-20 min). Once at your desired crispiness, place it on a paper towel to cool.
- Preheat a cast-iron skillet to medium-low. Melt 1 tablespoon of butter in the skillet.
- Assemble the sandwiches: Spread your jam on the bread, add a slice of cheddar (or more) and add four half-slices of bacon (2 full slices).
- Carefully place in the buttered skillet. Cook slowly until the bread is golden and the cheese hot and melted, flipping once, about 4 to 5 minutes per side. (I find it helps to place a lid or another heavy skillet directly over the pan.) Repeat with the second sandwich. Slice and serve immediately.
RCB Chicken Salad
Ingredients
For the Dressing
- 1/3c Avocado or Olive oil
- 1/3 c Balsamic Vinegar
- 1/4c Maple Syrup
- 2tbsp Dijon Mustard
- Salt & Pepper to taste
For the Salad
- Grilled Chicken Breasts
- 4 slices WI River Meats Raspberry Chipotle Bacon
- 4c mixed greens
- 1/2c Grape Tomatoes, halved
- 1/2c walnuts
- 1/2c raspberries
- 1/3c thinly sliced red onions
- 1/3c shredded Parmesan cheese
Instructions
- Cook your bacon however you prefer, we love oven baked or in a skillet!
- After cooking bacon, let it cool on a paper towel to remove excess grease, while it cools, toss all of your dressing ingredients in a bowl or bottle and mix well.
- Slice up grilled chicken breasts, and chop up your bacon.
- Toss greens in dressing mixture, coat all greens evenly.
- Assemble your salad! Toss in all mix ins and top with your chicken and bacon. Serve immediately as an entree or side!
Raspberry Chipotle Candied Bacon
Ingredients

- 12 strips WI River Meats Raspberry Chipotle Bacon
- 1/4 cup light brown sugar
- 1/2 teaspoon freshly ground black pepper (optional)
Instructions
- Preheat oven to 375° F. Line two baking sheets with foil, and place an oven-safe wire rack on each.
- Lay out the bacon strips on the wire rack, divided between the two pans- make sure they don’t overlap!
- Sprinkle the bacon strips with brown sugar- I like to use about 1 teaspoon of brown sugar per bacon strip, spreading it out evenly.
- Bake in the oven for 20 to 25 minutes. Start checking around 18 minutes, as some slices will cook faster, depending on the fat content and thickness of the slices.
- The bacon is done when the brown sugar is melted and the bacon is a deep brown color. Remember that the bacon will continue to crisp up as it cools, so don’t worry if it’s not completely crispy now.
- Serve once it’s cool! Top a salad, deviled eggs, pasta, BLT, or enjoy alone It stores well in the fridge and reheats nicely in a skillet.
