Ingredients
Brats
- 6 brats (sweet, spicy, or original flavor)
- 6 hot dog buns or split rolls
Marinated Peppers & Onions Topping
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon pure honey
- 1/2 large red bell pepper, thinly sliced
- 1/4 red onion, thinly sliced
- 1/3 cup feta cheese, crumbled
- 2 tablespoons fresh basil, chopped
- Kosher salt
- Black pepper
White Bean & Peppadew Salad Topping
- 1 15-ounce can white beans, rinsed
- 1/4 cup fresh flat-leaf parsley, chopped
- 6 Peppadew peppers, chopped
- 2 scallions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Kosher salt
- Black pepper
Zesty Pickle & Onion Topping
- 4 pickles, finely chopped
- 1/4 small white onion, finely chopped
- 3 tablespoons fresh flat-leaf parsley
- 2 tablespoons whole-grain mustard
- Kosher salt
- Black pepper
Tangy Horseradish Topping
- 3 tablespoons prepared horseradish
- 2 tablespoons sour cream
- 1 tablespoon white wine vinegar
- 1 tablespoon mayonnaise
- 1 teaspoon sugar
- 1/4 head purple cabbage, finely shredded (about 2 cups)
- 1 scallion, finely chopped
- 1 large carrot, grated
- 2 tablespoons fresh dill, chopped
- Kosher salt
- Black pepper
Spicy Chili Topping
- 1 cup white wine vinegar
- 2 tablespoons sugar
- 1 teaspoon coriander seeds
- 1/4 teaspoon Kosher salt
- 2 Fresno chilies, thinly sliced
- 1 medium red onion, thinly sliced
Grilled Lemon Broccolini
- 1 pound Broccolini
- 1 tablespoon olive oil
- 2 tablespoons Parmesan cheese, grated
- 2 tablespoons lemon zest
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Kosher salt
- Black pepper
Directions
Brats (Yield: 6 servings | Cook Time: 15-20 minutes)
- Grill the brats over medium heat, turning occasionally, for about 10 to 15 minutes until cooked through.
- If desired, grill the buns or rolls until lightly toasted.
- Serve the brats in the buns or rolls with any or all of the following toppings!
Marinated Peppers & Onions Topping (Yield: 6 servings | Prep Time: 15 minutes)
- Whisk together lime juice, olive oil, and honey in a bowl. Season with kosher salt and black pepper.
- Add red bell pepper and red onion. Let sit at room temperature, tossing occasionally, for 10 minutes.
- Add feta cheese and basil, then toss to combine.
White Bean & Peppadew Salad Topping (Yield: 6 servings | Prep Time: 5 minutes)
- Toss together beans, parsley, peppers, scallions, olive oil, and red wine vinegar in a bowl.
- Season with kosher salt and black pepper.
Zesty Pickle & Onion Topping (Yield: 2 cups | Prep Time: 5 minutes)
- Stir together pickles, white onion, fresh flat-leaf parsley, and whole-grain mustard in a bowl.
- Season with kosher salt and black pepper.
Tangy Horseradish Topping (Yield: 2 cups | Prep Time: 20 minutes)
- Whisk together prepared horseradish (squeezed of excess moisture), sour cream, white wine vinegar, mayonnaise, and sugar in a bowl.
- Add purple cabbage (about 2 cups), scallion, carrot, and fresh dill. Season with kosher salt and pepper.
- Let sit, tossing occasionally, for 15 minutes.
Spicy Chili Topping (Yield: 1 1/2 cups | Cook Time: 25+ minutes)
- Bring white wine vinegar, sugar, coriander seeds, and kosher salt to a simmer in a small pot over medium heat.
- Remove from heat and add Fresno chilies and red onion.
- Let sit, tossing occasionally, for at least 25 minutes or up to 3 days.
Grilled Lemon Broccolini (Yield: 6 servings | Cook Time: 10 minutes)
- Heat grill to medium-high.
- Toss together Broccolini, and olive oil in a bowl. Season with kosher salt and pepper.
- Grill Broccolini, turning occasionally, until charred for 3 to 5 minutes.
- Transfer the Broccolini to a cutting board and coarsely chop, then return it to bowl.
- Add Parmesan cheese, lemon zest, lemon juice, and olive oil in a bowl.
