Grilled Steak with Herb Butter and Homemade Seasoning

There are few things in life that taste better than a properly grilled steak. Its smokey and juicy flavor with a lightly crisp crust makes a steak worthy as a celebratory entrée yet it’s quick and easy enough for a weeknight dinner. Bring the flavor of your grilled steaks to the next level with these herb butter and homemade steak seasoning recipes that are sure to wow your guests!
Ingredients
- 2 – 1 pound bone-in strip steaks, 1.5 inches thick (or steak of your choice)
- Vegetable or grapeseed oil
For the Steak Seasoning
- 3/4 tablespoon rock salt
- 1.5 teaspoons whole black peppercorns
- 1/2 teaspoon dried garlic, minced
- 1/2 teaspoon dried onion, minced
- 1/4 teaspoon fennel seeds
- 1/8 teaspoon red chili pepper flakes
For the Herb Butter
- Big pinch of the homemade steak seasoning
- 1 stick salted butter (1/2 cup), softened to room temperature
- 1 tablespoon fresh rosemary, finely minced
- 1 tablespoon fresh thyme, finely minced
- 2 tablespoons parsley, chopped
- 1 garlic clove, pressed or minced
Directions
For the Steak Seasoning
Add the ingredients to a mortar and pestle, then coarsely grind. Alternatively, add the ingredients to a heavy duty Ziplock bag and squeeze all the air out, then crush the ingredients with a meat pounder, rolling pin, or heavy bottomed skillet.
For the Herb Butter
- Add the ingredients to a bowl, then stir with a fork to combine.
- Scoop the herb butter onto a sheet of plastic wrap, then shape into a thick log and refrigerate until firm. If you’re short on time, you can freeze the herb butter for 20-30 minutes.
For the Steaks
- Trim the steaks of any big hunks of fat to avoid flare ups on the grill, then pat dry with a paper towel.
- Drizzle each side lightly with oil, then season generously with the steak seasoning and rub it into steaks – you should use most, if not all of the seasoning.
- Light 2/3 or 1/2 of your grill burners (2 of the 3 burners or 1 of 2 burners), then heat on high for 10-15 minutes.
- Add steaks, then sear on each side for 1.5 minutes (adjust accordingly if your steaks are bigger or smaller than 1 pound and 1.5 inches thick), keeping the lid closed when not flipping.
- Transfer the steaks to an unlit portion of grill, then continue cooking for 7-10 minutes with the lid closed for medium doneness or until they’ve reached your preferred level of doneness.
- Remove the steaks to a platter and let rest for at least 5 minutes. Top with herb butter slices and serve!
