For this Meat Tip Monday, we are focusing on how to cook the perfect lamb roast. First, you want to stop by either The Meat Market or Local Source foods and pick up a lamb roast. To learn how to cook a lamb roast please follow these cooking tips:
Prepare Your Lamb
First, you want to place the lamb in a medium roasting pan and make about 20-30 holes in the lamb with a paring knife. Next, stuff some garlic into each of the openings until you run out of garlic. Then you want to rub the roast with oil all around and sprinkle both sides with rosemary, salt, and pepper.
Cooking Your Lamb
First, preheat your oven to 425° F. Once the oven is preheated place the lamb inside uncovered. The cooking time depends on what temperature you would like, for medium-rare cook for about 16 minutes per pound. If you want a medium-well lamb cook for about 18 minutes per pound, and for a well-done lamb cook for about 20 minutes per pound. Once the lamb is fully cooked to your likeness take the lamb out of the oven and let it rest for about 15 minutes before cutting and serving.
