How to Grill Skirt Steak

For this Meat Tip Monday, we will be focusing on how to grill the perfect skirt steak. First, you want to stop by either The Meat Market or Local Source foods and pick up some skirt steaks. To learn how to grill skirt steak, please follow these cooking tips:
Prepare Your Skirt Steak
First, you want to set out the skirt steak and let the meat get to about room temperature, this can take up to 30 minutes. Next, you will want to combine salt, pepper, and cayenne in a bowl. Once the skirt steaks reach about room temperature season the steaks all over with the combined mixture.
Cooking Your Skirt Steak
First, set your grill to high heat and let the cooking grate heat up. You will know when your grill is hot enough when you place your hand slightly above the grill grate, and it’s too hot for your hand. Next, place the steaks on the grill and cook without moving them until the side is seared. If you want a medium-rare steak, cook on each side for about 3 minutes. If you want more of a medium steak, cook for about 4 minutes per side. Once both sides are cooked take out a meat thermometer and check the temperature to make sure it’s to your liking. For rare, remove the steak at 120 F to 125 F; medium-rare 125 F to 130 F; and medium 130 F to 135 F. Remove the steak from the grill and wrap it in aluminum foil to rest. Let the steak rest for about 10 minutes.
