St. Patty’s Reuben Loaf

Ingredients
Dough
- 2 ½ cups all-purpose flour divided
- 1 envelope quick-rise yeast
- 1 tbsp sugar
- 1 tbsp butter unsalted
- 1 tsp salt
- 1 cup water 105 °F
Filling
- 1/3 cup special sauce Sir Kensington’s (or thousand island dressing)
- 8 ounces corned beef thinly sliced
- 6 ounces swiss cheese sliced
- 1 cup sauerkraut 8 ounce
Topping
- 1 egg white beaten
- caraway seeds
Instructions
Dough

In a large mixing bowl, combine the dry dough ingredients. Stir in the warm water. Mix until a soft dough forms.2 ½ cups all-purpose flour, 1 envelope quick-rise yeast, 1 tbsp sugar, 1 tbsp butter, 1 cup water, 1 tsp salt

On a lightly floured board roll dough into a 14-inch x 10-inch rectangle.

Transfer to a lightly greased baking sheet.
Filling

Spread the dressing down the center ⅓ of the dough.1/3 cup special sauce

Divide corned beef in ½. Top with ½ of the corned beef. Then layer on all of the sauerkraut and cheese. Finish with a final layer of corned beef.8 ounces corned beef, 6 ounces swiss cheese, 1 cup sauerkraut

Make cuts from the filling to the edge of the dough on each side, 1 inch apart. Fold the strips at an angle across the filling one at a time paying attention to consistent folds.

Cover dough and let rise in a warm spot out of drafts for 15 minutes.

Preheat oven to 400 °F

Brush with egg white and sprinkle with caraway seeds.1 egg white, caraway seeds

Bake for 25 minutes or until lightly browned. Serve immediately.
Notes
Tip: I recommend weighing in grams to get consistent results when you bake bread. This comes from years of getting inconsistent results. When I realized there was a solution – measuring by weight versus volume, it changed my cooking life. I’ve included volume US measurements for those who don’t have a digital kitchen scale.
Yeast: Note this recipe uses quick-rise yeast, which can be tossed right in with the dry ingredients. This makes this recipe quick and easy to make.
Special Sauce Substitution: You can easily substitute store-bought or homemade Russian or Thousand Island dressing for the special sauce.
