Pan-Fried Fish
First, you want to prep your fillets by drying them off with paper towels. This will make it so the coating will stick to the fish better. Next, make your coating by combining 1 beaten egg and 2 tablespoons of water or milk. In another bowl combine 2/3 cup of cornmeal or dry bread crumbs and 1/2 teaspoon salt and some black pepper. make sure to keep the wet mixture and the dry mixture separate. Now heat up your pan to medium-high heat. Once your pan is fully heated up put some vegetable oil in the pan. Next, take your fillets dip both sides into the egg mixture and then the dry mixture making sure to coat both sides of the fillet. Now add the coated fillets to the pan and fry until the fish is golden on the bottom; this typically takes about 3-4 minutes per side. After both sides are a nice golden brown, put the fillets on some paper towel to soak any excess oil.
Deep-Fried Fish
First, you want to prep your fillets by drying them off with paper towels. This will make it so the coating will stick to the fish better. Next, make your coating by combining 1/2 cup flour, 1/2 cup beer, 1 egg, and 1/4 teaspoon of baking soda, salt, and pepper. In another bowl just add 1/2 cup of flour. Next, dip the fillets into the flour, making sure to coat both sides fully. Make sure to shake off any excess flour. Next, dip the fillets into the flour/egg mixture coating all sides.
