Mint Blackberry Mojito

This is THE perfect summertime drink- light, fruity, and alcoholic😂 This recipe uses fresh blackberries, lime, and mint! Flavors can range from bittersweet to very sweet depending on what you modify in this recipe🥃
Blackberry Juice

- 1 pint blackberries (or two pints and 1/2c sugar if you like it really sweet)
- Raspberries are also great, you can use almost any fruit as a substitute!
- 1 cup water
- 1 medium lime or lime juice
- 1 pint blackberries (or two pints and 1/2c sugar if you like it really sweet)
Blackberry Mint Mojito
- 6 whole mint leaves
- 2 oz rum
- 2 oz blackberry juice
- soda water (use sprite if you like it sweeter)
Optional: If you’re one who doesn’t like the mint leaves in the drink, toss them into the blackberry juice blend! Or if you really want that mint flavor to stand out, only use half of the blackberry juice and make a mint simple syrup: 1c water, 1c sugar, and 2 sprigs mint leaves (or more). Combine everything and put it on the stove until it simmers, then let it cool and pull mint leaves out and add it to your drink. Viola!

In a blender, combine the blackberries, lime, and water. (I like to toss in the entire lime, even the peel to really pull out those flavors but that’s up to you🍈) Blend until pureed. Strain the juice thru a fine mesh sieve and discard all the seeds.
- After straining, you can blend it again with ice to make it into slushies😋 just use 1/2 c water for step 1

In a glass, add the mint leaves, and a splash of the soda water. Gently muddle to release the flavor from the mint leaves. Fill the glass with ice and add the rum, blackberry juice, and top with soda water. Stir to combine. Garnish with lime wedge, mint sprig and blackberries.
