Ingredients
- 2lbs UWP baby back pork ribs
- UWP Gourmet Seasoning to taste
- 1 tbsp olive oil
- 1/4 c finely diced onion
- 1/2 tsp ground cumin
- 1/2 c ketchup
- 1 tbsp chili sauce
- 2 tbsp light brown sugar
- 1 tbsp apple cider vinegar
Instructions
- Heat your oven or grill to 275F. Set aside a large roasting pan or rimmed baking sheet and aluminum foil.
- Generously season both sides of the ribs with UWP Gourmet Seasoning.
- Oven Baked: Place the ribs- meatiest-side down- in your roasting pan. You may need to cut the ribs in half to fit. Cover the pan or baking sheet tightly with aluminum foil. The ribs must be well-sealed to prevent drying out. On the Grill: Wrap ribs in aluminum foil and place on grill- meaty side down.
- Bake or grill for 2 ½ to 3 ½ hours- check the ribs at 1 hour, then again after 2 hours to see how they’re doing. Ribs are ready when the meat is cooked through and very tender. (To check if they are done, pierce them with a sharp knife. There should be little to no resistance. You can also gently bend the ribs. If the meat looks like it will easily pull away from the bone, they’re ready. If the meat is still tough, they are not ready)
- While the ribs are baking, prepare your sauce. Heat the olive oil in a saucepan over medium heat, then add the onions and cook until they’re soft and translucent (5-8min). Stir in the cumin and cook for another 30 seconds. Next, add the ketchup, hot chili sauce, brown sugar, and apple cider vinegar. Stir everything to combine, season with salt, and cook for 2 minutes. Set the sauce aside while the ribs finish baking.
- Remove the ribs from the oven, and generously brush both sides with barbecue sauce.
- Optional: Move an oven rack near the top of the oven and turn your broiler to high. Broil the ribs until the BBQ sauce begins to caramelize, about 3 to 4 minutes. Keep a close eye on them during this step to ensure the sauce doesn’t burn.
